About Billy
Billy has more logged dinners than anyone else here — fifty-two rated evenings — and he was raised into it, born into a family of restaurateurs and then twenty-five years across most corners of the trade. He is a cook and a pastry chef, which is rarer than it sounds and means dessert is not an afterthought on his menus. His model is deliberately loose: he would rather build a menu with you than sell you a printed one, and he will just as happily leave a week of labelled, reheatable food in the fridge as plate a four-course dinner. He drives up from the Salt Lake Valley, and he is upfront that a bad-weather night to a hard-to-reach property can carry a travel fee.
