About Evan

Evan cooks the most obviously restaurant-looking food on this roster — sauce pooled and dotted, herbs placed one at a time, the sort of plate people photograph before they eat it. He learned it in Utah Valley kitchens and by reading and testing on his own time, and he works farm-to-table in the literal sense: the menu gets decided close to the date because he wants to know what he can actually get. He is also the only chef here who will do a full sushi service, rolling salmon, tuna and eel in the kitchen you are staying in. Groups of twenty have gone through his tasting menu without the pacing falling apart, which is not true of everyone who says they can do it.
